In the Kitchen With SI Swimsuit: Chef Angus’s Cauliflower Silk Recipe

Take your taste buds to Brush Creek Ranch in Wyoming with this incredible dish.

Last fall the SI Swimsuit crew was lucky enough to stay at the luxurious Brush Creek Ranch in Saratoga, Wyo. There we dined on the best of what Brush Creek had to offer and models Danielle Herrington, Emily DiDonato and Kim Riekenberg participated in tastings and cooking classes with Chef Angus of The Farm at Brush Creek. Lucky for us, Chef Angus shared his famous recipe for Cauliflower Silk. This would pair perfectly with a nice red and a medium-rare steak. Now you can get that wild west feeling in your own kitchen (cowboys not included).

Ingredients:

1,500 grams cauliflower diced

150 grams heavy cream

15 grams fleur de sel

2 grams thyme

1 squeeze fresh lemon juice

8 grams of goat butter (since you most likely don't have a goat in your backyard like they do, just head to the grocery store and pick-up the classic)

Salt to taste

Directions:

  • In a medium pot, bring the cauliflower cream, salt and thyme to a simmer
  • When the contents are tender add to a blender and turn on high
  • Blend till perfectly smooth, add the butter at the end
  • Adjust seasoning to taste and finish with a squeeze of lemon juice
  • Enjoy
