In the Kitchen With SI Swimsuit: Carrot Cake, Banana Bites and Chrissy Teigen’s Hot Fudge

This quarantine has brought out the Julia Child in all of us. From peanut butter cookies to sourdough, to soup and pasta, everyone seems to be cooking and baking all day. For many in New York City, this means cleaning out kitchen storage spaces (aka the oven) to make way for the newest breakfast casserole or that banana bread that seems to be on everybody's Instagram story.

Many SI Swimsuit models love to cook and we’ve been getting some amazing inspiration from their creations. Olivia Culpo made a carrot cake with cream cheese frosting (my favorite), Kate Bock has been offering up some healthy options with banana bites and Chrissy Teigen has whipped up the hot fudge sundae of our childhood dreams. (Can Chrissy and John adopt me?) So we decided to give you a roundup of our favorite SI Swimsuit model recipes of the week.

Olivia Culpo’s Carrot Cake: I love a carrot cake. So much so that I spent five hours perfecting one for my boyfriend's birthday yesterday. Olivia seems to mimic my love for this delicious, caramelized, nutty, cream cheese-topped masterpiece ( and so does Chrissy). Both Chrissy and I are partial to this recipe by Southern Living; the buttermilk glaze really is the extra icing on the cake. Olivia’s recipe calls for many ingredients that are nicely organized and listed below. Her cream cheese frosting is super simple yet sure to be delicious because, let's be honest, how can butter, cream cheese and sugar mixed together not be. And her Instagram video makes me want to bake another cake ASAP!

Kate Bock’s Chocolate Pecan Banana Bites: Can we all just agree that Kate is living her best life right now? From daily cooking videos to workout tutorials and more, she has inspired me to put down that tub of cookie dough. Her latest creation is this perfect post-dinner snack. Combine bananas, oats, eggs, chocolate, cinnamon, dates, pecans and baking soda and you’ve got yourself a healthy yet delicious treat. We can’t wait to see what she comes up with next!

Chrissy Teigen’s Hot Fudge Sundae: I was drooling over this Instagram story. Hot fudge takes everyone back to their childhood. It’s so simple, yet so rich and delicious and when Chrissy recommends a recipe I always follow (no, really, I have all her cookbooks). This recipe calls for butter, heavy whipping cream, chocolate chips, sea salt and a few other ingredients you most likely have lying around. It takes about 15 minutes to make and once it’s done, pile it on the ice cream of your choice, add your toppings and enjoy. For toppings may I suggest the frosted circus animal crackers on her sundae below?
