I wasn’t always health conscious and aware of my eating habits. Like most of the population, I habitually ate what was convenient, whether that was a drive-through meal at McDonalds or my favorite white chocolate mocha from Starbucks.

Even after joining the military and enduring strenuous amounts of physical training, I was still eating whatever I wanted, unaware of the impact my lifestyle would create down the road.

I began struggling with PCOS (Polycystic Ovary Syndrome) and thyroid issues. My menstrual cycle came late and when it did come, the pain was debilitating. I would miss work throughout the week, and it became evident that I had to make some extreme lifestyle changes.

I found myself reflecting on my habits, particularly in relation to diet and realized that my eating habits needed a significant overhaul. I cut back on processed sugars and dairy, and immediately noticed a significant change in my complexion and acne. Additionally, incorporating lean proteins and complex carbs addressed my PCOS issues.

This understanding marked the beginning of an in-depth exploration into the world of healthy eating. I was obsessed, to say the least. I started educating myself on the nutrients essential for immune function and health. My grocery shopping transformed into a conscious effort to include a variety of fruits, vegetables, lean proteins and whole grains. Meal planning became more intentional, with a focus on creating well-rounded, nourishing dishes. The kitchen, once a place for convenience, turned into a haven for crafting wholesome meals.

The shift wasn’t just about physical health; it extended to my mental and emotional well-being, too. The connection between a nutrient-dense diet and my mental state became obvious. My anxiety decreased and the energy derived from whole foods fueled a sense of vitality that was particularly crucial during my health struggles.

Ultimately, this journey allowed me to understand the relationship between what we consume and how our bodies, minds and the world around us respond. The commitment to a healthier diet became not just a response to my immediate health needs, but a lifelong investment into living well and the reason I’ve decided to share my recipes and knowledge today.

Instead of relying on traditional sugary cereals or processed options, I’ve embraced nutrient-dense choices to kickstart my day on a positive note. Below are my top three go-to breakfast meals that I eat throughout the week.

One of my favorites, avocado toast with fruit is a nutritious breakfast option that combines the creamy richness of avocado with the sweetness and freshness of fruits.

Avocados are packed with essential nutrients, including vitamins like folate, potassium, and vitamin E. The fruits, especially berries, bring antioxidants to the mix and also provide a natural sweetness without the need for added sugars, which makes this dish both flavorful and nutritious.

  • 1 tbsp. baking powder
  • Organic rolled oats
  • Vanilla extract
  • Greek yogurt
  • 1 banana

Oatmeal pancakes offer a delicious and nutritious twist to the classic breakfast staple. I especially like oatmeal for its wide range of health benefits. If I’m looking to lose a couple of pounds, I incorporate oatmeal into my diet throughout the week. The complex carbohydrates in oats provide a steady release of energy, keeping you fuller for longer.

Oats also contain a good source of fiber, which promotes heart health by helping lower cholesterol levels. I can create an entirely separate article just on this powerful grain alone. But we will keep it short for the sake of time. I paired this version with raspberries and kiwi, which allows for endless flavor combinations, keeping the mornings exciting. You can switch this up by adding toppings like yogurt, or a drizzle of natural honey for an extra boost of flavor.

I have this meal a few times a week. It’s quick, easy and delicious. Scrambled eggs with mushrooms constitute a healthful and delectable breakfast choice. These eggs, sourced from pasture-raised hens, boast high-quality protein and elevated levels of omega-3 fatty acids, promoting muscle repair and heart health. The mushrooms provide an added dose of antioxidants combating stress and supporting cellular well-being. This breakfast not only satisfies the palate, but also nourishes the body, aligning taste with health-conscious decisions.
